SABROSO - MEXICAN CUISINE
It stands to reason that a border city like El Paso would have the finest and most authentic Mexican cooking available. But dishes from Mexico are not all the same with various regions all having their own unique cuisine. The cooking in the northern states is referred to as Norteño and is known for its carne asada and beef dishes. The Oaxacan region is famous for its tamales and moles while central Mexico is the producer of menudo, pozole, barbacoa and carnitas. The Mexican costal regions have cuisines that center around fresh fish and seafood whereas southern Mexico favors chicken and vegetable meals. Whatever region your favorite Mexican cuisine centers on, chile peppers, beans, and tortillas are always a staple.
